Pumpkin...

So, time to do something with the 3/4 of a pumpkin that is currently freezing in the back of the fridge.
Diced up and stewing as we speak.
Part is intended for pumpkin pie, but there is only so much pumpkin pie you can eat. I am laying bets of around 5-10 cups of pumpkin total being made, of which 2-4 (?) will be used for the pie. I plan on freeing it and dragging it out when appropriate, but I only make pumpkin pie about every 4-6 months, so not high odds that it will get used up in the next 1 1/2.

Any other recipes involving stewed pumpkin people can recommend?

Bearing in mind the fact that appart from pumpkin pie, I really don't like pumpkin... Willing to try stuff as long as there are good odds it doesn't taste too pumpkinish. Otherwise, Z gets it for lunches for the rest of the week... which might not be a bad thing but...

Edit: And that should read "freezing it", but I'll leave it as is cause the mental image of gamboling pumpkin frolicking in fields, waiting to be called in and used is just too...

Do you have a good recipe for pumpkin pie? I've been looking for a nice one for ages.

As for pumpkin uses: pumpkin scones are yummy, and totally not pumpkiny, but I'm not sure where my recipe is. I'd recommend the Internets!

Dairy-free pumpkin pie recipe though you can always make it dairy again by swapping the coconut cream for normal cream.

You can always use it in cakes or muffins. There was that cafe in the Arts Centre that did amazing pumpkin and chocolate muffins. There was no pumpkin flavour at all and the muffins were really moist and delicious. The big chunks of chocolate didn't hurt either.

Soup - Pumpkin mush, lots of cumin, cinnamon, black pepper, dash of mace, dash of salt, double cream, perhaps some cashews or slivered almonds for texture... Hmmmm...

Pumpkin, mixed with sauteed garlic and onions, 2 cups grated aged cheddar, two tins of drained chickpeas, salt, pepper, tobasco to taste, mix then bake till bubbly. Delicious and somewhat un-pumpkiny, good for lunches.

Oh I like this... Hmm, hmm, hmm... Will try this over the weekend. Might try fresh, cooked chickpeas as I loathe canned ones... And I'll have to omit the salt and cheese (the best parts I'm sure :( ) for health reasons...
