Lemon/lime cordial recipe
This is loosely based on a recipe found and made up in a half batch a while ago, which tasted nice...
4 c raw sugar
3 c honey (using a 3/4 c honey = 1 c sugar swap - original recipe used 9 c white sugar - used pure sugar last time)
3 lemons (juice and rind)
3 limes (juice and rind)
the remains of the 75g pack of tartaric acid (less than half)- recipe called for 20g.
the remains of the 75g pack of citric acid (less than half) - recipe called for 40g.
(skipped the epsom salts)
1.5 L of water
3 cinnamon quills (not in the original recipe)
couple whole cloves (not in the original recipe)
Boil sugar, honey, water, rind, cinnamon and cloves together until mix boils, remembering to stir more often than I did. Take off the heat, add the remaining acid and juice, and let cool. Strain into a bottle. Keep in a cool place (we used fridge last time). Mix 1 part cordial to about 8 parts water (is strong). Nice hot or cold.
Now what I would really like is a cinnamon/spice cordial mix...
