Road kill for dinner

Any one recommend a good recipe for hare?

Wondering about this (jugged hare), but the blood was not kept.
This (Peppered Hare) sounds good but Z doesn't want to have to de-bone the bugger.
Or maybe this (braised hare).

Or just biff on a bed of rosemary, cover in bacon, add garlic cloves and a dash or red or white wine, cover and back for a couple hours?

If you have one of those old enamelled cast iron pots, chuck it in there with a buch of vegetables, some juniper berries (not too many!), garlic en masse and a bottle of beer, and let it slow cook for a few hours. That's my preferred way for most game, actually.

Serve with mealy potatoes, because the jus makes one hell of a gravy.

I believe my Grandad would have boiled it in brine and then fried it.

I've never done this myself mind.

This may work, actually, as it could have done with more salt.
